Kay Baxter

Kay Baxter is a pioneering organic and regenerative gardener, permaculture teacher, and co-founder of the Kōanga Institute in New Zealand. With over 50 years of experience, she is a leading authority on nutrient-dense food production, seed saving, and the connections between soil, food, and human health.

Kay has been instrumental in preserving New Zealand’s heritage food plants, earning a New Year’s Honor in 2017 for her contributions to regenerative agriculture. She has authored key books such as Change of Heart, The Koanga Garden Guide, and Design Your Own Orchard, alongside practical booklets on seed saving, composting, and growing nutrient-dense food.

Her current focus is transitioning Kōanga Institute’s food systems to rely entirely on locally-produced compost, creating models for regenerative, high-BRIX food production. Kay’s work continues to inspire gardeners and growers toward regenerative, resilient food systems.
